
Peanut Butter Cookie Dough Bites

1 1/2 Cups of Rolled Oats (gluten-free if possible!)

2 Tbsp Coconut Oil

2 Tbsp Smooth Peanut Butter (100% peanuts is best. Substitute with Cashew, Almond, Sunflower Seed Butter if you want to get fancy)

1/4 Cup Pure Maple Syrup or other liquid sweetener

1 Tsp Pure Vanilla Extract

1/2 Cup Ground Almonds or Almond Flour

1/4 Tsp Fine Grain Sea Salt

3 Drops of dōTERRA* Wild Orange (Optional flavour boost)

2 Tbsp Dark Chocolate Chips or Cacao Nibs
OKAY, LETS DO THIS!...

Blend Oats in a high-speed blender (Vitamix is our fave!) into a fine flour

In a large bowl, combine Coconut Oil, Peanut Butter, Maple Syrup, and Vanilla. Beat with a hand mixer until smooth. Add Ground Almonds, Oat flour, and Salt and beat again until combined

Fold in Dark Chocolate Chips/Cacao Nibs, and add 3 drops of Wild Orange essential oil

Roll the dough into small bite-size balls and place on a plate lined with parchment paper

Place in freezer for 5-10 minutes, until firm. Keep refrigerated or store in a freezer bag
So moreish! A family-fave. Trust me....these won't last long, and that's if you resist eating the dough straight from the mixing bowl! YUM.
