Coco-Lime Chocolate Hemp Protein Balls

  • 1 Cup of lightly packet pitted Medjool Dates

  • 6 Tbsp Hemp Hearts (or Hemp Seeds)

  • 3 Tbsp unsweetened Cocoa powder or raw Cacao powder

  • 2 Tbsp Shredded Coconut (unsweetened)

  • 1 Tbsp Coconut Oil

  • 1/4 Tsp fine-grain Sea Salt

  • 3 Drops of dōTERRA* Lime Essential Oil or Zest of 1 Lime

  • 2 Tbsp chopped Dark Chocolate (optional)

  • 1-3 Tsp Water - if needed

 

Keep aside Shredded Coconut for coating the prepared bite-size Protein Balls

OKAY, HERE WE GO!...

  1. Place the pitted dates in a food processor and process until a ball forms

  2. Add the remaining ingredients to the food processor (hemp hearts/seeds, cocoa/cacao powder, coconut, coconut oil, salt, lime essential oil, and chocolate, if using) and process until combined and near smooth. The dough should be sticky and shouldn’t crumble when you form a ball. If it’s not sticky enough, add 1 to 3 teaspoons of water gradually, processing after each little addition

  3. Lightly wet hands if needed, shape the dough into balls and place them on a lined plate

  4. Roll each ball in Shredded Coconut until coated

  5. Freeze the balls for 20 minutes until firm or simply enjoy right away! Keep refrigerated
