Blueberry Banana Nut Muffin

  • 2 Cups of All-Purpose Flour (Gluten Free if possible)

  • 1 Tbs Baking Powder

  • 1/2 Tsp Salt

  • 1/2 Cup Smooth Peanut Butter

  • 1/2 Cup Brown Sugar (or Coconut Sugar)

  • 1 Cup of Plant Based Milk (Almond, Oat, Coconut)

  • 3 Ripe Medium Bananas 

  • 1 Tsp Vanilla Extract

  • 1/2 Cup Chopped Walnuts

  • 3/4 Cup Frozen Blueberries

Now Lets Get Busy!

  1. Preheat Oven to 375F/190C. Prep the muffin tray by greasing or using paper cups.

  2. In bowl, mix together the Flour, Baking Powder, and Salt. 

  3. In another bowl, mix together the Sugar and Peanut Butter until creamy.

  4. In a third bowl (aaah, the dishes!!) mash the Bananas, stir in Plant Based Milk, and Vanilla then add to Creamy Peanut Butter mix.

  5. Add wet ingredients to dry, and stir until combined. Add more milk if needed.

  6. Fold in Walnuts and Blueberries.

  7. Scoop batter into muffin tray or cups.

  8. Bake 18-22 minutes, until a toothpick comes out clean.

  9. Let cool, then devour!
